Instructions

  1. Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
  2. Bring to a boil over high heat. Once boiling, cover, remove from heat, and let sit 12 minutes.
  3. Transfer eggs to an ice bath for 5 minutes. Peel under cool running water.
  4. Slice eggs in half lengthwise. Gently remove yolks to a bowl.
  5. Mash yolks with a fork until smooth.
  6. Add Greek yogurt, mayonnaise, mustard, rice vinegar, sriracha, salt, and pepper. Mix until creamy.
  7. Taste and adjust seasonings.
  8. Pipe or spoon filling into egg white halves.
  9. Garnish with chives and a sprinkle of smoked paprika.
  10. Refrigerate until serving. Best within 2 days.
