Instructions

  1. Dissolve honey in warm water, sprinkle yeast on top. Let sit 5-10 minutes until foamy.
  2. Mix both flours and salt in a large bowl. Add yeast mixture and olive oil. Stir until dough forms.
  3. Knead on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour until doubled.
  5. Preheat oven to 475°F with a pizza stone or inverted baking sheet inside.
  6. Punch down dough. Roll or stretch into a 12-14 inch circle on parchment paper.
  7. Brush edges with olive oil. Spread sauce evenly, leaving a 1/2-inch border.
  8. Top with mozzarella, then your desired toppings, then Parmesan.
  9. Slide pizza (on parchment) onto the hot stone. Bake 12-15 minutes until crust is golden and cheese is bubbly.
  10. Let cool 2 minutes before slicing.
