Instructions

  1. Warm ranchero sauce in a small saucepan over low heat.
  2. Heat black beans in another small pan with a splash of water.
  3. Warm tortillas in a dry skillet for about 30 seconds per side. Keep warm.
  4. In a large skillet, melt butter over medium heat. Fry eggs to your preference (sunny-side up or over easy is traditional).
  5. To assemble: Place 2 tortillas on each plate, overlapping slightly.
  6. Top with black beans, then fried eggs.
  7. Spoon warm ranchero sauce over the eggs.
  8. Top with cheese, avocado slices, and fresh cilantro.
  9. Serve immediately with hot sauce on the side if desired.
