Instructions

  1. Peel horseradish root and cut into 1-inch cubes.
  2. Place horseradish in a food processor or blender.
  3. Add vinegar, salt, and sugar.
  4. Process until finely ground. Be careful when opening the lid - the fumes are very strong!
  5. The timing of adding vinegar affects heat: add early for milder, add after processing for maximum heat.
  6. Transfer to a jar. Refrigerate for up to 4-6 weeks.

Note: Make in a well-ventilated area. The fumes are much stronger than onions!
