Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Whisk in flour and cook for 1 minute to form a roux.
  3. Gradually whisk in milk. Cook, whisking constantly, until thickened, about 3-4 minutes.
  4. Reduce heat to low. Add cream cheese and stir until melted.
  5. Add cheddar and Monterey Jack a handful at a time, stirring until each addition melts.
  6. Stir in green chiles, cumin, garlic powder, salt, and cayenne.
  7. If dip is too thick, add a splash more milk.
  8. Transfer to a serving bowl or small slow cooker to keep warm.
  9. Serve with tortilla chips.
