Instructions

  1. Choose mangos that are ripe but still slightly firm - they should give a little when pressed. Dice into small cubes.
  2. Add diced mango to a bowl along with red bell pepper and red onion.
  3. Add minced jalapeño. Start with half if you're sensitive to heat and add more to taste.
  4. Add cilantro, lime juice, honey, salt, and cayenne if using.
  5. Gently fold everything together.
  6. Taste and adjust seasonings - more lime for tang, more honey for sweetness, more jalapeño for heat.
  7. Cover and refrigerate at least 30 minutes for flavors to blend.
  8. Serve with tortilla chips, over grilled fish or chicken, with tacos, or alongside pork.
