Instructions
- Combine warm water and honey in a large bowl. Sprinkle yeast over top. Let sit 5-10 minutes until foamy.
- Add both flours and salt. Mix until a shaggy dough forms.
- Knead on a floured surface for 10 minutes until smooth and elastic.
- Place in an oiled bowl, cover, and let rise 1 hour until doubled.
- Punch down dough. Divide in half. Roll each piece into a 14-inch rope, tapering the ends.
- Place on a parchment-lined baking sheet dusted with cornmeal. Cover and let rise 45 minutes.
- Preheat oven to 450°F. Place an oven-safe pan on the bottom rack.
- Using a sharp knife or razor, slash 3-4 diagonal cuts across the top of each baguette.
- Place baguettes in oven. Carefully pour 1 cup hot water into the pan below to create steam. Close door quickly.
- Bake 20-25 minutes until deep golden brown and hollow-sounding when tapped.
- Cool on a wire rack before slicing.
