French Onion Soup
Slow onions, bubbly cheese, pure bliss. Bistro-worthy, from your own kitchen.
Instructions
- Melt butter with oil in a large pot over medium heat. Add onions and stir to coat.
- Cook onions for 45-60 minutes, stirring every 5-10 minutes, until deeply caramelized and brown. Add coconut sugar halfway through to help caramelization.
- Add wine and scrape up any browned bits from the bottom. Cook until wine is mostly evaporated.
- Add beef broth, thyme, bay leaf, and salt. Bring to a simmer and cook 15 minutes.
- Preheat broiler. Ladle soup into oven-safe crocks or bowls.
- Top each with a slice of French bread and generous amount of Gruyère.
- Place under broiler for 2-3 minutes until cheese is melted and bubbly.
- Serve immediately. Be careful - bowls will be very hot!
