  3. Mash to desired texture: Using a fork or potato masher, lightly mash the cherries to break them down while leaving some texture. The glaze should coat the back of a spoon thickly and hold its shape.
  4. Cool and divide: Remove from heat and let cool slightly before using. Divide into two equal portions β€” one for the mid-smoke application and one for the finishing glaze. Notes
