Fresh Mango Salsa
Sweet, tangy, and slightly spicy - this tropical salsa is perfect with fish, chicken, or just chips.

Instructions
- Choose mangos that are ripe but still slightly firm - they should give a little when pressed. Dice into small cubes.
- Add diced mango to a bowl along with red bell pepper and red onion.
- Add minced jalapeño. Start with half if you're sensitive to heat and add more to taste.
- Add cilantro, lime juice, honey, salt, and cayenne if using.
- Gently fold everything together.
- Taste and adjust seasonings - more lime for tang, more honey for sweetness, more jalapeño for heat.
- Cover and refrigerate at least 30 minutes for flavors to blend.
- Serve with tortilla chips, over grilled fish or chicken, with tacos, or alongside pork.
