Instructions

  1. Pour balsamic vinegar into a small saucepan.
  2. Add honey if using - this creates a sweeter, more syrupy glaze.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to medium-low and simmer gently.
  5. Cook for 15-20 minutes, stirring occasionally, until reduced by half.
  6. The glaze is ready when it coats the back of a spoon and drips slowly.
  7. Remove from heat - it will thicken more as it cools.
  8. Be careful not to over-reduce or it will become too thick and sticky.
  9. Let cool slightly before drizzling. Store in a jar at room temperature for up to 2 weeks.
  10. If glaze becomes too thick, gently warm it or stir in a few drops of balsamic vinegar.
