Chicken Pot Pie

Instructions
- Preheat oven to 400°F.
- Melt butter in a large saucepan over medium heat. Add onion and celery, cook until softened.
- Whisk in flour and cook 1 minute.
- Gradually add broth and milk, whisking constantly. Cook until thickened, about 5 minutes.
- Stir in chicken, peas, carrots, corn, salt, pepper, and thyme.
- Pour filling into a 9-inch deep dish pie plate.
- Top with pie crust, crimping edges. Cut slits in the top for steam to escape.
- Brush crust with a little milk or beaten egg for golden color.
- Bake 30-35 minutes until crust is golden and filling is bubbling.
- Let rest 10 minutes before serving.
