  1. Preheat oven to 425°F. Line a baking sheet with parchment and place a wire rack on top. Spray rack with cooking spray.
  2. Set up three shallow dishes: flour in the first, beaten eggs in the second, and panko mixed with Parmesan, paprika, garlic powder, and salt in the third.
  3. Separate onion slices into individual rings.
  4. Dredge each ring in flour, dip in egg, then coat thoroughly in the panko mixture.
  5. Place rings on the wire rack in a single layer. Drizzle lightly with olive oil.
  6. Bake 15-20 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve immediately with homemade ketchup or dipping sauce.
