Homemade Soft Pretzels

Instructions
- Combine warm water, honey, and yeast in a large bowl. Let sit 5 minutes until foamy.
- Add salt, both flours, and 2 tablespoons melted butter. Mix until dough forms.
- Knead for 5-7 minutes until smooth. Place in oiled bowl, cover, and let rise 1 hour.
- Preheat oven to 425°F. Line baking sheets with parchment.
- Bring 10 cups water and baking soda to a boil in a large pot.
- Divide dough into 8 pieces. Roll each into a 24-inch rope.
- Shape into pretzels: make a U-shape, cross the ends over each other twice, fold down to the bottom of the U and press to seal.
- Boil each pretzel for 30 seconds, flipping once. Remove with a slotted spoon to the baking sheet.
- Brush with egg wash and sprinkle with coarse salt.
- Bake 12-15 minutes until deep golden brown. Brush with remaining melted butter while still warm.
