Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour and cook for 1 minute.
  3. Slowly pour in beer, whisking constantly. It will foam up, so add gradually.
  4. Add milk and whisk until smooth. Bring to a simmer.
  5. Reduce heat to low. Add cheese one handful at a time, stirring until melted.
  6. Stir in mustard, Worcestershire, garlic powder, cayenne, and salt.
  7. Serve warm with soft pretzels, bread cubes, or raw vegetables.
  8. Store leftovers refrigerated; reheat gently with a splash of beer or milk.
