Instructions

  1. Remove steaks from refrigerator 30-45 minutes before cooking. Pat very dry with paper towels.
  2. Season generously on all sides with salt and pepper.
  3. Heat oil in a cast iron skillet over high heat until smoking.
  4. Carefully place steaks in pan. Do not move them for 3-4 minutes to develop a crust.
  5. Flip steaks. Add butter, garlic, thyme, and rosemary to the pan.
  6. Tilt pan and baste steaks with the butter for 2-3 minutes.
  7. Check internal temp: 125°F for rare, 135°F for medium-rare, 145°F for medium.
  8. Rest steaks for 5 minutes before slicing. The temperature will rise 5 degrees while resting.
  9. Spoon herb butter over steaks before serving.
