Instructions

  1. Divide ground beef into 4 equal balls (about 4 oz each). Don't overwork the meat.
  2. Heat a cast iron skillet over high heat until smoking hot.
  3. Butter the cut sides of the buns and toast in a separate pan until golden. Set aside.
  4. Place a beef ball in the hot skillet. Using a sturdy spatula, smash it flat (about 1/4 inch thick). Season with salt and pepper.
  5. Cook without moving for 2-3 minutes until edges are brown and crispy.
  6. Flip, immediately add cheese, and cook 1 more minute.
  7. Place patty on toasted bun. Add lettuce, tomato, onion, and your favorite condiments.
  8. Repeat with remaining patties. Serve immediately.
