  1. Combine warm water, honey, and yeast in a large bowl. Let sit 5 minutes until foamy.
  2. Add salt, both flours, and 2 tablespoons melted butter. Mix until dough forms.
  3. Knead for 5-7 minutes until smooth. Place in oiled bowl, cover, and let rise 1 hour.
  4. Preheat oven to 425°F. Line baking sheets with parchment.
  5. Bring 10 cups water and baking soda to a boil in a large pot.
  6. Divide dough into 8 pieces. Roll each into a 24-inch rope.
  7. Shape into pretzels: make a U-shape, cross the ends over each other twice, fold down to the bottom of the U and press to seal.
  8. Boil each pretzel for 30 seconds, flipping once. Remove with a slotted spoon to the baking sheet.
  9. Brush with egg wash and sprinkle with coarse salt.
  10. Bake 12-15 minutes until deep golden brown. Brush with remaining melted butter while still warm.

Recipe Notes

1) For a lighter, more traditional texture, substitute 4 cups all-purpose flour for the whole wheat flours. 2) The baking soda bath is essential — it creates that signature chewy crust and deep brown color. 3) Best eaten the same day, but can be frozen and reheated in a 350°F oven.
