- Divide ground beef into 4 equal balls (about 4 oz each). Don't overwork the meat.
- Heat a cast iron skillet over high heat until smoking hot.
- Butter the cut sides of the buns and toast in a separate pan until golden. Set aside.
- Place a beef ball in the hot skillet. Using a sturdy spatula, smash it flat (about 1/4 inch thick). Season with salt and pepper.
- Cook without moving for 2-3 minutes until edges are brown and crispy.
- Flip, immediately add cheese, and cook 1 more minute.
- Place patty on toasted bun. Add lettuce, tomato, onion, and your favorite condiments.
- Repeat with remaining patties. Serve immediately.
