Instructions

  1. Reduce apple cider: Simmer apple cider in a saucepan over medium heat until reduced to ½ cup, about 15-20 minutes. Let cool completely.
  2. Preheat oven to 350°F. Grease a donut pan well.
  3. Whisk together flour, coconut sugar, baking powder, baking soda, spices, and salt.
  4. In another bowl, whisk reduced cider, egg, melted butter, buttermilk, and vanilla.
  5. Add wet ingredients to dry and stir just until combined.
  6. Pipe or spoon batter into donut pan, filling each cavity about ⅔ full.
  7. Bake 10-12 minutes until donuts spring back when touched.
  8. Let cool in pan 5 minutes, then remove to a wire rack.
  9. Mix coating coconut sugar with cinnamon in a shallow bowl.
  10. Brush warm donuts with melted butter, then roll in cinnamon sugar.
  11. Best served warm on the same day.
