Instructions

  1. For biscuits: Mix flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined.
  2. Pat dough to 1-inch thickness. Cut into rounds with a biscuit cutter.
  3. Bake at 425°F for 12-15 minutes until golden brown.
  4. For gravy: Cook sausage in a skillet over medium heat, breaking it up, until browned.
  5. Sprinkle flour over the sausage and stir to coat. Cook 1 minute.
  6. Gradually add milk, stirring constantly. Cook until thickened, about 5 minutes.
  7. Season with salt and plenty of black pepper.
  8. Split warm biscuits and ladle gravy generously over the top.
