Smoked BBQ Pulled Pork
Low and slow pays off. Smoky, tender, impossibly good.

Instructions
- Mix all dry rub ingredients in a small bowl.
- Pat pork butt dry with paper towels. Apply rub generously all over, pressing into the meat and into any crevices.
- Place uncovered in refrigerator overnight (or at least 4 hours) to dry brine.
- Remove pork from refrigerator 1 hour before smoking.
- Place pork in smoker, fat side up. Smoke low and slow, spritzing with apple cider vinegar every hour to keep the bark moist.
- Smoke until internal temperature reaches 195-205°F and the meat is probe-tender (probe slides in like butter), about 6-8 hours.
- Remove from smoker, tent loosely with foil, and rest for 30 minutes.
- Shred with two forks, discarding any large fat pieces.
- Toss with BBQ sauce to your liking, or serve sauce on the side.
- Pile onto buns and top with coleslaw if desired.
Recipe Notes
1) Cook time 6-8 hours (use meat probe for accurate temperature) 2) Recommended wood chips: hickory, apple or cherry 3) Use spray bottle for easy application of apple cider vinegar 4) The "stall" is real — the temp will hover around 150-170°F for what feels like forever. Be patient, don't crank the heat. 5) For a faster cook, wrap in butcher paper or foil when it hits 165°F (the "Texas crutch"). 6) Leftovers freeze beautifully for up to 3 months. Reheat with a splash of apple cider vinegar to refresh.
